Dalgona Coffee Brownie Cookie Bars

Coffee, Brownie, Cookie…yes please!

Many of you are loving the delicious Dalgona Coffee drink craze, as I am. I thought wouldn’t this whipped coffee be just delicious in a brownie?! And to step it up a notch, why not add a cookie in there too? If you love chocolate and coffee together this is your dessert. This recipe has a few steps, but is not overly complicated. Since all the flavors work well together and the batters blend together while baking, they are very forgiving. Mine resulted in a beautiful golden chocolately-coffee crust on top. Enjoy!

Ingredients

Brownies

  1. 1/4 cup butter

  2. 1/2 cup sugar

  3. 1 egg

  4. 1/4 tsp vanilla

  5. 1/4 cup oat flour

  6. 1/8 cup gluten free flour

  7. 2 tbsp chocolate chips

  8. dash sea salt

  9. dash cinnamon (if desired)

Dalgona Coffee

  1. 4 tbsp instant coffee

  2. 4 tbsp sugar

  3. 4 tbsp boiling water

Chocolate Chip Cookie Dough

  1. 6 tbsp butter

  2. 2/3 cup brown sugar

  3. 1/4 cup sugar

  4. 1 eggs

  5. 1/2 tsp vanilla

  6. 1/2 tsp salt

  7. 1/2 cup oat flour

  8. 1/2 cup gluten free flour

  9. 1/2 tsp baking soda

  10. 1/2 cup chocolate chips (optional-if you like them extra rich-I tried both and preferred without)

Instructions


Preheat oven to 350°. Line 8×8 baking dish with parchment and spray with cooking spray.

Brownies


In a small saucepan, melt butter, and then add sugar to dissolve. Add in cocoa powder, sifted. Mix in chocolate chips and vanilla. Chocolate chips will melt. Cool 5-8 min, to about room temp.


Whisk in egg. Whisk in flours and salt. Set aside while you make the cookie dough.

Cookie Dough


Beat softened butter and sugars together until creamy.


Add egg and vanilla and beat until well combined.


Add flour, baking soda and salt. Mix in chocolate chips. (you can also leave the chocolate chips out if you prefer). Set aside while you make the Dalgona coffee.

Dalgona Coffee


Add all ingredients instant coffee, sugar and water) together and mix on high with hand mixer 2 minutes until whipped, thick and fluffy.

How to combine all 3 recipes and spread in pan


Spread cookie dough into bottom of prepared pan first. It doesn't need to be perfect.


Spread with thin layer of Dalgona coffee mixture.


Top with brownie mixture, spread to cover as best you can.


Top with remaining Dalgona coffee, in strips–this makes a pretty pattern. You can run a butter knife through the coffee streaks to make it look nice.


If desired sprinkle with cinnamon.

Bake 40-50 minutes. It will be done when the cake tester comes out just about clean, a bit of moist crumble is fine, as long as it is not wet. The brownies will puff up quite a bit also.
