A healthier Valentine treat

Ever since I can remember I have always loved sesame candies-they are crunchy and sweet but the versions in the stores are usually filled with corn syrup and sugar. There is a recipe version from Italy and Greece which are made with only honey that hit the sweet spot. This brittle that has the crunch of sesame seeds and is like eating candy without all the food dyes, sugar and preservatives. In Italian these are called La giuggiulena or cubbaita and in Greek they are Melekouni. They are simple and quick to make with just a few ingredients. I have an abundance of chia seeds so I made mine with chia seeds and the addition of pistachios. Next year when I do have my act together I’ll be sure to make these ahead for special Valentines deliveries.
Sesame Seed Chia Pistachio Candies
Honey sweetened seed and nut " brittle" that has a chewy crunch. Its like eating candy without all the food dyes, sugar and preservatives.

Ingredients
1/2 cup sesame seeds
1/4 cup chia seeds
1/4 cup pistachios chopped/crushed
3/4 cup honey
Instructions
Preheat oven to 350°. On a parchment lined sheet, toast the seeds and nuts together until golden, about 5-7 minutes. Keep an eye on them and stir occasionally so they do not burn.
Meanwhile, bring honey to a boil in a medium saucepan over medium heat. Simmer until bubbly, about one minute, then add the seeds in.
While mixture is cooking, using the same parchment and pan from toasting the seeds, butter the parchment sheet to prevent sticking.
Cook for about 4-6 minutes until the mixture is golden and bubbly and begins to come together a bit.
Spread mixture onto the prepared parchment and smooth out with a rubber spatula until its about 1/4" thick. Try to keep it in a squarish shape to get the most out of the cuts.
Once it's cool, about 15 minutes, with a sharp knife score the top making cuts that make 1" squares.
Let it cool another 10 minutes and cut/crack the shapes completely.
