Zucchini Bread-Gluten Free

We are lucky to have an abundance of zucchini growing in our garden. We just can’t use it fast enough! Sometimes our zucchini get so big because they grow quickly here and hide so well. One day they are normal sized the next they are the size of a small baby.

Last night we had a yummy gluten free pasta with sauteed chicken, garlic, zucchini and ricotta. That used half of our gianormous green monster.

So today, I thought I would shred the other half and make a zucchini bread. I have avoided making zucchini bread for a long time, because it’s usually so full of sugar and white flour that it defeats the purpose of having anything green in it. But this recipe is gluten free, uses much less sugar and is full of nuts and healthy oat flour. Hope you enjoy!




Tonight I’m still trying to keep up with our massive amounts of it…zucchini pancakes?? Zucchini fritters? Or maybe just remaining shredded leftovers in some ground turkey lettuce cups. What are your favorite zucchini recipes?
